Sankranti, also known as Makar Sankranti, is a widely celebrated festival in the southern Indian states of Andhra Pradesh and Telangana. This festival marks the transition of the sun into the zodiac sign of Capricorn (Makara) and the beginning of the auspicious Uttarayan period. Sankranti is a time for joy, gratitude, and the celebration of the harvest season. A variety of traditional dishes are prepared during this festival, reflecting the rich culinary heritage of Andhra Pradesh and Telangana.

Pulihora (Tamarind Rice): Pulihora is a tangy and flavorful rice dish made using tamarind pulp, rice, and a medley of spices. To prepare Pulihora, cooked rice is mixed with a spicy tamarind paste, flavored with mustard seeds, chilies, curry leaves, and garnished with roasted peanuts. Ellu Bella (Sesame and Jaggery Sweets): Ellu Bella is also known as “nuvvula ginjalu” in Telugu. Ellu Bella is a traditional Sankranti snack that symbolizes the sweetness and harmony of life. It is a mixture of roasted sesame seeds, roasted groundnuts, finely chopped dry coconut, jaggery pieces, and finely cut sugarcane. Garelu (Urad Dal Fritters): Garelu, also known as Medu Vada in some regions, are deep-fried fritters made from urad dal (black gram) batter.
